La sève de bouleau biologique

Issue de la Recherche Avancée Sothys. La sève est récoltée dans la zone limitrophe du Cantal et de la Corrèze, à quelques kilomètres des Jardins de Sothys à Auriac. Sa récolte manuelle est réalisée par un professionnel sur des arbres sélectionnés rigoureusement (âge, diamètre…). Respectueuse de l’environnement, elle débute fin février-début mars lors de la montée de la sève dans le bouleau et se termine avant l’éclosion des premiers bourgeons. Après récolte, le trou est rebouché avec une cheville en bois afin de permettre à l’arbre de refaire son écorce. Un bouleau peut produire jusqu’à 200 litres par jour, Sothys prélève entre 5 et 10 litres par jour par arbre. Riche en sucres et minéraux, la sève de bouleau est reconnue pour ses propriétés hydratantes et revitalisantes.
